Sweet Red Pepper Dip with White Beans
Yield: About 3 cups
Ingredients
- 1 (8–12 ounce) jar fire roasted red peppers, drained
- 1 cup canned white beans, rinsed
- 3 cloves garlic, peeled and trimmed
- 2 ounces sherry vinegar
- 1 tablespoon Dijon mustard
- 4 ounces olive oil
- Salt and pepper, to taste
- Cut vegetables for dipping:
- Carrots
- Celery
- Bell peppers
- Broccoli
- Cauliflower
Directions
- Place the fire roasted red peppers, white beans, garlic, sherry vinegar, Dijon mustard, olive oil, and a sprinkle of salt and pepper into a blender.
