Chicken and Sausage Skillet with Zucchini, Red Peppers and Wild Rice 

  • 1 Tablespoon Avocado Oil 
  • Onion, thinly sliced  
  • Red Bell Pepper, thinly sliced  
  • 1 cup Mushrooms, thinly sliced  
  • 1 cup Zucchini, thinly sliced  
  • 1 Tablespoon Avocado Oil  
  • 1 pound Chicken Breast, ½ inch cubes  
  • 1 pound Italian Sausage links, cut into 1/2-inch slices 
  • 1 28 ounce can Stewed Tomatoes, undrained  
  • Garlic cloves, minced  
  • 1 teaspoon dried Basil  
  • 1 teaspoon dried Oregano  
  • 3 cup Wild Rice, cooked 

Heat avocado oil in a large skillet. Add onion, bell pepper, mushroom and zucchini and sauté over high heat until vegetables begin to brown. Remove veggies and set aside.  In the same pan, heat 1 T avocado oil and add chicken and Italian sausage. Cook until these have begun to brown. Add stewed tomatoes, garlic, basil and oregano. Bring up to a simmer and stir in the reserved vegetables. Cover and continue to simmer for 5-10 minutes to allow flavors to blend.  Stir in the wild rice or serve over the top of the rice.
